How to Cook With a Chinese Wok

Cooking with a wok is easy, provided you follow some simple guidelines. Wok cooking originated with the Chinese and is rapid cooking over high heat in a minimal amount of oil. Remember that the key to cooking with a wok is truly in the preparation.

    • Stove
    • Vegetables
    • Meats
    • Poultry
    • Fish

      • 1

        Organize your ingredients prior to cooking. Clean and chop vegetables, ginger and garlic. Cut meats, poultry or fish into bite-size pieces. Mix sauce or thickening agents.

        Put the wok on the stoveand heat for 1 minute on a high temperature. Add 1 tpsp. oil and heat for 30 seconds. Reduce heat very slightly.

        Add the ingredients in small amounts. Add the meat, poultry or fish first, because that will take the longest to cook. Add vegetables and sauces last, because they cook more quickly. Cook ingredients thoroughly, until all ingredients have been added. Stir continuously while the food is cooking for an even distribution of heat and cooking time. Remove the food from the wok and serve immediately.
