How to Make a Custard Rice Pudding

A custard style rice pudding is an excellent comfort food made with rice, milk, eggs and raisins. It is a great way to use left over rice or a good reason to cook extra rice. Custard style rice pudding makes a delicious dessert or a treat for breakfast.

Instructions

Things You'll Need:

  • 2 eggs, beaten
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1 cup milk
  • 2 cups cooked white rice
  • 1/3 cup raisins
  1. Step 1

    To cook the rice, mix twice as much water as uncooked rice in a saucepan. For example, 1 cup of uncooked rice requires 2 cups water. Stir, cover and cook over low heat until the rice is tender and the water is absorbed. Set aside to cool.

  2. Step 2

    In a mixing bowl, combine the beaten eggs, sugar, vanilla, cinnamon, and milk. Stir in 2 cups cooked rice and raisins. Pour into a casserole dish or other oven safe baking dish. Bake at 350 degrees for about 1 hour or until the pudding is set and firm. The recipe makes 4 servings.

  3. Step 3

    The Custard Rice Pudding may be served warm with whipped cream or half and half. It may also be refrigerated and served cold. Diced dates or dried cranberries make a good substitute for the raisins. Nutmeg or pumpkin pie spice may be substituted for the cinnamon.
