How to Make a Custard Rice Pudding

A custard-style rice pudding is an excellent comfort food made with rice, milk, eggs and raisins. It is a great way to use leftover rice, or a good reason to cook extra rice.   • 2 eggs, beaten
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1 cup milk
  • 2 cups cooked white rice

Instructions

      Mix two parts water and one part uncooked rice in a saucepan. For example, 1 cup of uncooked rice requires 2 cups water. Stir, cover and cook over low heat until the rice is tender and the water is absorbed. Set aside to cool.

      Combine the beaten eggs, sugar, vanilla, cinnamon and milk in a mixing bowl. Stir in 2 cups cooked rice and raisins. Pour into a casserole dish or other oven safe baking dish.

      Bake the mixture at 350 F for about one hour, or until the pudding is set and firm.

      Serve the custard rice pudding warm with whipped cream or refrigerate and serve it cold.

Tips & Warnings

  • Diced dates or dried cranberries make a good substitute for the raisins. Nutmeg or pumpkin pie spice may be substituted for the cinnamon.
