How to Make Cajun Chicken Gumbo

The unique taste of Cajun cuisine has world wide appeal, Gumbo is one such dish. Gumbo is a type of soup with a Louisiana personality and Chicken Gumbo is just one of many types.

Instructions

Things You'll Need:

  • 6 qt. cook pot
  • Cutting board
  • Knife
  • Measuring spoons
  • Ingredients as listed
  1. Step 1

    Boil approximately 6 lbs of chicken 40 minutes or until done; remove from bone and setaside until later. Cut up 1 lb of cooked link sausage into 1/2" pieces and setaside.

  2. Step 2

    Add to cook pot the chicken stock left from boiling the chicken and water combination to equal total of 3 quarts. Add and dissolve 3 heaping tablespoons of medium or dark roux. Roux can be purchased pre-made in jar or can be made by browning flour in equal parts of oil in skillet.

  3. Step 3

    Add: 1 large chopped onion; 1 green chopped bell pepper; 2 stalks of chopped celery or 1/2 tsp celery seed as substitute; 4 cloves chopped garlic or 3/4 tsp garlic powder as substitute; 1 tbsp Worcestershire Sauce; 2 cups chopped okra(optional); 1-1/2 tsp salt; 1-1/2 tsp of Cajun or Creole seasoning, any brand, adjust amount of Cajun seasoning to suit tolerance for spicy taste.

  4. Step 4

    Add sausage to other ingredients, bring to boil and allow to simmer on low for 1 hr. Add pre-cooked chicken last 10 minutes of cooking time. Serve over rice and sprinkle with File' to add that extra special taste. Serves 8 to 10 people. (John 3:16)
