Things You'll Need:
- cupcake tin
- cupcake papers
- oven
- Mixing bowl/mixer/utensils
- 1-3/4 cup flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 1 cup granulated sugar
- 1/3 cup applesauce
- 2/3 cup creamy peanut butter
- 3 large eggs
- 1/2 teaspoon vanilla
- 1/2 cup sour cream
- chocolate chips

Step 1
Preheat oven to 375 degrees. Line muffin tin with cupcake papers. In medium bowl, whisk together flour, baking soda, baking powder and salt. Set this bowl aside.

With an electric mixer cream together the butter and sugar on medium-high speed until fluffy. Reduce speed to low and add peanut butter until mixed.

Add eggs one at a time. Scrape down sides of bowl when necessary. Add vanilla and mix. Add flour mixture gradually and mix just until combine. Mix in sour cream.

Fill each lined cup halfway with batter. Sprinkle 5-6 chocolate chips along the top of the cupcake batter. Bake for 15-20 minutes. Insert a toothpick into the center of a cupcake and if it comes out without batter on it, the cupcakes are done. Remove cupcakes from tins and allow to cool on cooling rack.
