These cupcakes are topped with chocolate chips and are satisfying for a peanut butter/chocolate craving.

Instructions

Things You'll Need:

  • cupcake tin
  • cupcake papers
  • oven
  • Mixing bowl/mixer/utensils
  • 1-3/4 cup flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1/3 cup applesauce
  • 2/3 cup creamy peanut butter
  • 3 large eggs
  • 1/2 teaspoon vanilla
  • 1/2 cup sour cream
  • chocolate chips
  1. Step 1

    Preheat oven to 375 degrees. Line muffin tin with cupcake papers. In medium bowl, whisk together flour, baking soda, baking powder and salt. Set this bowl aside.

  2. Step 2

    With an electric mixer cream together the butter and sugar on medium-high speed until fluffy. Reduce speed to low and add peanut butter until mixed.

  3. Step 3

    Add eggs one at a time. Scrape down sides of bowl when necessary. Add vanilla and mix. Add flour mixture gradually and mix just until combine. Mix in sour cream.

  4. Step 4

    Fill each lined cup halfway with batter. Sprinkle 5-6 chocolate chips along the top of the cupcake batter. Bake for 15-20 minutes. Insert a toothpick into the center of a cupcake and if it comes out without batter on it, the cupcakes are done. Remove cupcakes from tins and allow to cool on cooling rack.

Tips & Warnings
  • This recipe makes about 24 cupcakes, depending on how much batter you put in each tin.
  • These cupcakes will stay fresh in your refrigerator for 2-3 days if you put them in a sealed container.
