How to Make File' for Gumbo

File' is used in Gumbo to enhance the flavor which is unique to Cajun cuisine. File' is made of leaves from the Sasafras tree. Gumbo is similar to soup, however, with a Louisiana personality.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  1. Step 1

    Break limbs off Sasafras tree during the Month of August since this is the time of year the flavor is at its peak.

  2. Step 2

    Hang the Sasafras limbs in a dry, well ventilated, shaded area until the leaves are completely dry. Under optimum drying conditions takes approximately two weeks.

  3. Step 3
    File'
    File'

    Remove the dried leaves from the limbs and grind to a fine powder using a food processor or blender.

  4. Step 4

    Store in an air tight container in dark cabinet until time to use by sprinkling into bowl of Gumbo. Empty seasoning bottle with shaker top is ideal to store and use file'. The shelf life can be several years as it retains its flavor. So good! (John 3:16)
