Step 1
Pmupkin Fudge
2 Cups Sugar
1/2 Cup Evaportated Milk
3 Tablespoons Unsweetened Canned Pumpkin
1/2 Teaspoon Cinnamon
1/4 Teaspoon Cornstarch
1/2 Teaspoon Vanilla
1. Grease 9 inch square pan with butter.
2. Combine sugar, milk, pumpkin, cinnamon and cornstarch inlarge sauce pan. Cook over low heat stiring constantly, until mixboils.Still stiring, continue cooking until mix reaches 236*F on candy thermometer.
3. Remove from heat, add vanilla and beat with mixer until smooth. Scrape into prepares pan and let cool.
4. When cooled cut into squares and enjoy or wrap carefully and store in frig. -
Step 2
Pumpkin Ice Cream
1 Small Can unsweetened Pumpkin
1/2 Cup Brown Sugar
1/2 Teaspoon Ground Ginger
1/4 Teaspoon Ground Nutmeg
1 Quart Creamy french vanilla ice cream, slightly soft
1. Thoroughly mix pumpkin, sugar, cinnamon, ginger and nutmeg together.
2. Fold in ice cram until mixture is all one color.
3.0Pack in a freezer container and store in the freezer. Allow ice cream to soften before serving. -
Step 3
Pumpkin-Mango Smoothie
1 Cup Mango Juicce
1 Cup Nonfat Vanilla Yogurt
1/3 Cup Unsweetened Canned Pumpkin
1 Ripe Mango, peeled and cut in 1 inch cubes
or 1 Cup Frozen Mango
1 Tablespoon Sugar
1/4 Teaspoon Ground Cinnamon
1/8 Teaspoon Ground Nutmeg
4 Ice Cubes
1. Place all ingredients in blender and puree' until smooth.
2. Taste and adjust flavoring.
3. Serve icy cold.
