How to make Nopal Salad (Cactus Salad)

Nopal Salad is a traditional Mexican salad usually eaten with carne asada and corn tortillas. Use the corn tortillas to make a carne asada taco and add the nopal salad on top . . . yummy

Instructions

Things You'll Need:

  • cooked nopales (see my article how to cook Cactus (Nopales)
  • 4-5 ripe tomatoes (beefsteak or similar)
  • 1 medium size white onion
  • 4-8 serrano chilies
  • 1 bunch cilantro
  • Queso Fresco - Mexican fresh cheese
  1. Step 1

    Cook the nopales (see corresponding article How to Cook Cactus (Nopales)) and let them cool. Drain, reserving the liquid to be drank later. If you do not have fresh nopales or do not have time the canned nopales would work however the fresh ones have a better flavor.

  2. Step 2

    Chop the nopales into bite size pieces and add to a large mixing bowl (I use a serving dish or a large resealable plastic container).

  3. Step 3

    Wash the tomatoes, chilies and cilantro. Peel the onion.

  4. Step 4

    Chop the tomatoes into cubes and add to the mixing bowl.

  5. Step 5

    Finely chop the onion and chilies and add to the mixing bowl.

  6. Step 6

    Remove the stems from the cilantro, chop and add to the mixing bowl.

  7. Step 7

    Mix all ingredients and top with crumbled queso fresco and serve. If the whole preparation will not be consumed in one sitting then crumble the cheese into a separate container and add to your plate when you serve yourself.

Tips & Warnings
  • Is a great addition to a taco
  • Nopales have been proven to lower the glycemic load of a meal.
  • Drink the juice drained in step 1 - it is yummy and has benefits to diabetic and pre diabetic people.
