How to Make Hummus Without Chickpeas-Southwest Hummus

Hummus is usually made with chickpeas. But I have not come across a rule that says you have to use chickpeas. Hummus can be made with any legume. Hummus made with other legumes are thinner than hummus made with chickpeas. Adjusting the citrus juice or water might be in order. Some hummus recipes require olive oil to be mixed in with the legume. In my recipe using olive oil is optional. This hummus recipe is called Southwest Hummus.

Instructions

Things You'll Need:

  • 1 can pinto beans
  • 4 garlic cloves
  • 1/8 cup chopped onion
  • 1/3 cup tahini (sesame paste)
  • 1 to 2 tablespoons olive oil (opt)
  • juice of 1/2 to 1 lime
  • 1 1/2 tsp salt
  • 2 tablespoons water
  • 1/2 to 1 tsp cumin
  • 1/2 tsp red pepper (opt)
  • 1/3 cup fresh cilantro
  1. Step 1

    Drain and rinse the pinto beans and place in a food processor. Rough chop the onion and garlic and place in food processor. Add the juice of 1/2 half lime and the tahini. If using olive oil, add oil at this time. Pulse until smooth. If the mixture is thick and won't pulse, add the 2 tablespoons of water and pulse again.

  2. Step 2

    After pulsing the above mixture, add the cumin, red pepper and salt. Pulse again until smooth. Taste and adjust seasonings if needed. At this time, more lime juice can be added if desired.

  3. Step 3

    The final ingredient is the fresh cilantro. Add the cilantro and do a quick pulse. If the cilantro has not chopped fine enough, do another quick pulse again. Pour into a bowl and serve with corn chips or crackers.

Tips & Warnings
  • Pinto beans are high in fiber.
  • Pinto beans are a good source of protein.
  • Pinto beans are low in fat.
  • Pinto beans are heart healthy and can lower cholesterol (any legume can do this).
  • Pinto beans will help to reduce mild heartburn. I have found that only pinto beans work well to reduce heartburn.
  • Legumes will cause gas as does most high fiber foods.

on 9/15/2009 Thanks Nancy, I get tired of the same old hummus. Chickpeas are boring to me and I have many more hummus recipes floating around in my head. But I don't want to have a lot of recipes on ehow. I have been racking my brain, trying to find other things to write about.
