Do both mental and physical activities. If they don't use it they will lose it. You may get opposition, but don't allow this to stop you. Tip: when your use a reward system it works. For example, my mother loves flowers, so if I say, after we do this we will get some flowers she will do what I ask.
Pay attention to the level of fitness both mental and physical. We are all different and some will tire more from mental stimulation and others physical. When you do activities with the elderly it's imperative that you know their strengths.

Be positive, what you do and say affects their abilities. They will pick up on negativity and lose motivation to do anything. If you're dreading it they will know, so act like it's the most fun thing to do ever. Think of it as if playing a game with a small child, since in a way their mind functions as a child.
Prepare ahead and know what brings the best response. Ask them what they like to do and write it down. At the top of your elderly activities list should be the favorites and then the must do's. Do the must do's first and the favorites as a reward or vice versa if you know they will keep their part of the bargain.
When you manage activities for the elderly it can be a challenge, but if you are consistent the result is well worth the effort.
