How to make a Healthy Chicken Parmesan

When I first started dating my wife, we went out to dinner a lot. Usually after about 30 minutes with the menu, my wife would go ahead and order her usual Chicken Parmesan. Needless to say, we've tasted our fair share of the "ole stand-bye", and every experience had one thing in common.....once we were finished with our meal, we were so stuffed, we could barely move. I began to think of a good way to still get that great Chicken Parmesan flavor, without that bloated feeling afterwards. Below is a very simple recipe for a great tasting alternative to a traditional classic breaded chicken dish. It is very tasty, low in fat, low in Carbs, and a great way to get that restaruant taste, with out breaking your diet.

Instructions

Things You'll Need:

  • 1 lb Boneless/skinless Chicken Breast
  • salt and pepper
  • garlic powder
  • basil flakes
  • fresh tomatoes, sliced
  • shredded mozzarella cheese
  • tomato sauce
  • olive oil
  1. Step 1

    Trim any fat off the Chicken Breasts. Cut into ½ inch medallions and place on baking sheet(if baking sheet is not non-stick, I usually spray it with a little olive oil before adding the chicken.)

  2. Step 2

    Sprinkle Chicken with salt, pepper, garlic powder and basil. Drizzle each piece of chicken, with olive oil and place in a 350 degree preheated oven for about 20 minutes. Meanwhile in small pan, heat the tomato sauce.

  3. Step 3

    After 20 minutes, remove from oven and top each piece of chicken with one or two slices of tomato. Place back in oven and cook for 10 more minutes.

  4. Step 4

    After the tomatoes have cooked for 10 minutes, cover chicken with shredded mozzarella and place in oven to melt the cheese.

  5. Step 5

    Once the cheese is melted, remove from oven and top with tomato sauce. Serve immediately.

Tips & Warnings
  • This dish is good alone or with a side of pasta.
