Eggs are a good source of protein, relatively inexpensive to buy and make a delicious sandwich. Deviled Egg Sandwiches use few ingredients, are quick to prepare and can be enjoyed for lunch or dinner. If you like deviled eggs, you will like this sandwich.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 6 eggs
  • 1/4 cup mayonnaise + extra to spread on bread
  • 1/2 teaspoon dry minced onion
  • 1 teaspoon mustard
  • salt and pepper
  • 6 slices bread
  1. Step 1

Select 6 eggs that have been stored in the refrigerator for a week or two. Older eggs are easier to peel than very fresh eggs. Place eggs in a medium size saucepan and cover with water. Heat over medium heat until water barely comes to a boil. Simmer for 20 minutes. Drain off hot water and replace with cold water. Quickly cool the eggs by adding ice to the water.

  2. Step 2

When the eggs are cool, peel and rinse. Place the eggs in a small mixing bowl. Use a fork to mash the eggs into small pieces. Add the 1/4 cup mayonnaise, dried onion, mustard, salt and pepper and mix well.

  3. Step 3

Spread mayonnaise on 6 slices of bread. Wheat or multi-grain bread is a good choice for this sandwich. Spread 1/3 of the egg mixture on 3 slices of bread. Top with the remaining slices of bread. Makes 3 sandwiches.

  4. Step 4

Lettuce leaves, alfalfa sprouts, and/or sliced tomatoes make tasty additions to this sandwich. A sprinkle of paprika will add taste and color to the filling. Be sure to promptly refrigerate any leftovers.
