How to make (Saturated) Fat Free Brownies

Enjoy delicious fuggy brownies without saturated fat or trans-fat; a.k.a. Dave’s Deliciously Decadent Dark Chocolate Brownies.

Instructions

Things You'll Need:

  • Cocoa powder, baking soda, Walnut/Peanut Oil, brown sugar, eggs, flour, vanilla extract, salt
  1. Step 1

    START WITH THE INGREDIENTS FOR A VEGETABLE OIL BROWNIE RECIPE
    3/4 cup cocoa powder
    1/2 teaspoon baking soda
    2/3 cup vegetable oil
    1/2 cup boiling water (measure accurately)
    2 cups brown sugar
    2 eggs
    1+1/3 cups all-purpose flour
    1 teaspoon vanilla extract
    1/4 teaspoon salt

  2. Step 2

    SUBSTITUTE HEALTHIER INGREDIENTS
    (a.) Instead of 2/3 cup of vegetable oil, use ½ cup of Walnut Oil with 2.5 – 3.5 ounces of Applesauce or Prune (or Prune-Apple) Baby Food. Walnuts are the healthiest nut, very low in saturated fat and high in Omega 3 fatty acids!
    (b.) Instead of two eggs substitute four egg whites. The yolk contains most of the saturated fat in a typical egg!
    (c.) Instead of two cups of sugar use two cups of brown sugar. The molasses in brown sugar has natural antibacterial properties, so it won’t promote tooth decay.

  3. Step 3

    ADD-IN OTHER HEALTHY INGREDIENTS, AS DESIRED.
    (a.) Add one cup of chopped Walnuts.
    (b.) Add one cup of dark chocolate chips. Coca butter will not raise blood cholesterol levels in humans, so get chips with coca content near 70% or read the label to make sure there is no milk fat! The Ghirardelli Bittersweet Baking Chips (available nationally) are 60% coca.
    (c.) Add 1/4 cup of Hershey’s Dark Chocolate Syrup, if desired.

  4. Step 4

    MIX INGREDIENTS AND BAKE
    (1) Stir cocoa and baking soda in mixing bowl. Blend in 1/4 cup vegetable oil. Add boiling water; stir until mixture thickens.
    (2) Stir in sugar, eggs, apple/prune baby food and remaining 1/4 cup vegetable oil; stir until smooth.
    (3) Add flour, vanilla and salt; blend completely. Add chocolate chips or nuts as desired.
    (4) Pour into lightly greased (or use peanut oil) 13 x 9 inch baking pan or two 8 inch square pans.
    (5) Bake at 350 degrees for 35-40 minutes for 13 x 9 inch pan, 30-32 minutes for 8 inch square pans.
    (6) Cool; frost, if desired.

Tips & Warnings
  • If you don’t have access to Walnut Oil; Peanut Oil will work well with brownies, although it is not quite as healthy.
  • Upgrade the cocoa powder with Ghirardelli’s Baking Cocoa or Hershey’s Dark Chocolate Baking Powder.
  • To test brownies, use toothpick one or two inches from sidewalls of the pan. When brownies are done the toothpick will be nearly clean. Repeat test, if you get a chocolate chip by accident!
  • Beware, most pre-made frostings are loaded with Trans-fats. Look for “partially hydrogenated” on the ingredients list.
