How to Make Blueberry Buckle with a Crumb Topping

What's better than blueberries? I don't know anyone who doesn't love blueberries. Blueberries are probably one of the most versatile fruits, I know of. This blueberry buckle recipe is simple to make and tastes absolutely fabulous. It's just one more reason to love blueberries.

Instructions

Things You'll Need:

  • 2 cups fresh blueberries (frozen blueberries can be used if you don't have fresh blueberries)
  • ¼ cup butter or margarine
  • ¾ cup sugar
  • 1 egg
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon table salt
  • ½ cup milk
  • Crumb topping:
  • ¼ cup butter or margarine
  • ½ cup sugar
  • 1/3 cup all purpose flour
  • ½ teaspoon cinnamon
  1. Step 1

    Preheat oven to 375 degrees.

  2. Step 2

    Blueberry Buckle recipe: In a large mixing bowl beat 1/4 cup butter or margarine until it becomes very creamy. Add ¾ cup sugar and mix well. Add 1 egg and mix until well blended. Next add in the dry ingredients: 2 cups all purpose flour, 2 teaspoons baking powder and ½ teaspoon table salt. Pour in ½ cup milk and mix until everything is well blended. Fold in 2 cups fresh blueberries. If using frozen blueberries there is no need to defrost blueberries.

  3. Step 3

    Crumb topping recipe: In another mixing bowl put in, ¼ cup butter or margarine, ½ cup sugar, 1/3 cup all purpose flour and ½ teaspoon cinnamon. Mix together by hand until ingredients are crumbly.

  4. Step 4

    Pour blueberry buckle recipe into a greased 9"x9"x2" baking dish. Now sprinkle crumb topping mixture on top of blueberry buckle mixture. Bake in 375 degree oven for 35 minutes.

Tips & Warnings
  • If using frozen blueberries instead of fresh blueberries, add 10 minutes to baking time.
