How to Boil a Sweet Potato and Remove the Skin

Sweet potatoes have been touted lately as the "healthy potato." They are an excellent way to increase your daily vegetable intake- if you know how to prepare them quickly. Read this article to learn how to boil and remove the skin without spending valuable time peeling.

      Place your potatoes with the skin on in the stock pot, so that they have room to move.

      Add hot tap water to the potatoes up to an inch above the largest potato.

      Boil potatoes for 30 minutes, until you can stick the meat fork in and remove it with very little resistance. Lots of resistance will mean crunchy potatoes later- don't under cook! Turn burner off at the end of the 30 minutes.

      At the end of the time, place ice and cold water in the glass dish.

      Remove potatoes one potato at a time, using the meat fork and place in the glass dish so that the icy water is covering the potato completely. Let potato sit in icy water for 30 seconds to 1 minute.

      Grab the potato with both hands (use your judgement and be careful not to burn yourself) and twist to remove the skin. You may have to pull skin off, but it should come off easily. When skin is removed place in desired bowl or on a cutting board.

      Repeat process until all potatoes are finished. You may need to replace the icy water if it heats up to much to remove the skin easily- this usually happens after 4 potatoes.

Tips & Warnings

  • This is an excellent way to cook sweet potatoes to make baby food! After you boil and remove the skin- chop into manageable peices, toss into your food processor (add a little water as needed), and freeze in ice trays.

  • Be sure to keep children away from the boiling water and keep all handles turned toward the wall of your stove.
