How to Bake a Blueberry Buckle Loaf

A blueberry in every bite, guaranteed!

I am always disappointed with the commercial blueberry cake or muffin that makes you look for the blueberries. I can't help but think "Where's the fruit?" This generous recipe satisfies my craving for a mouth watering blueberry confection.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • The loaf:
  • 2 cups flour
  • 2 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 3/4 cup sugar
  • 1 large egg
  • 1/4 cup shortening or soft butter
  • 3/4 cup milk
  • 2 cups blueberries
  • The topping:
  • 1/2 cup brown sugar
  • 1/3 cup flour
  • 1/2 teaspoon cinnamon
  • 1/4 cup soft butter or margarine
  • loaf pan
  1. Step 1

    Combine the 2 cups of flour, baking powder and salt in a bowl and mix them well with a spoon and then set aside the bowl.

  2. Step 2

    In a mixing bowl combine the egg and sugar and blend with the mixer. Add the shortening (or butter) and continue mixing. When blended, add the milk and the dry ingredients and mix well.

  3. Step 3

    Mix in the 2 cups of blueberries by hand. If you mix too vigorously the batter will turn blue as some blueberries break. It is not a bad thing so don't worry about the final baked loaf.

  4. Step 4

    Spread shortening or butter all around the inside of the loaf pan. (Make sure you get the corners.) Pour the batter into the loaf pan.

  5. Step 5

    For the topping combine 1/2 cup brown sugar, 1/3 cup flour, 1/2 teaspoon cinnamon and 1/4 cup soft butter. (Use butter or margarine for this step, Crisco type products won't give a good result). Sprinkle over the top of the batter in the loaf pan.

  6. Step 6

    Bake at 350 degrees for 45 minutes. Insert a knife in the middle of the loaf to test to see if it is done. (If it is not done the knife will have batter on it or little crumbs stuck to it.) The sides of the loaf should also have pulled slightly away from the side of the pan. (It shrinks a little as it cooks.)

  7. Step 7

    When done let the loaf cool for 15 minutes before removing it from the pan.
