Fruit leather or jerky can be made with almost any kind of fruit. This recipe will make naturally dried fruit leather that you can just roll up and pack for a snack or with a packed lunch.

Difficulty: Easy
Instructions

Things You'll Need:

  1. Step 1

Blend 4 cups or your favorite fruit or fruit blend in a blender or food processor until it is completely smooth. Citrus fruits like oranges and lemons will not work alone. You can mix them with a more hardy fruit like strawberries, pineapple or apples.

  2. Step 2

Line a jelly roll pan or cookie sheet with plastic wrap so that there are no bare spaces on it. Jelly roll pans work better than cookie sheets because they have an edge, so you don't have to worry about drips.

  3. Step 3

Cut cheese cloth and cover the pans with it. You need to cover the pans to keep the bugs out and let air through at the same time to promote the drying process. Cheese cloth or some other porous material will work.

  4. Step 4

Set the pans in a sunny window or place. If it is summertime or you live in a warm climate, then you can set them outside. Be careful of weather conditions like wind and rain. Take the pans inside as necessary.

  5. Step 5

Test the jerky for the degree of dryness each day. The pan will start drying from the outside in. The corners will dry first. Try to have the puree spread out evenly so that the jerky will dry evenly. The process will take a few days. The fruit leather is ready when the center of the pan is completely dry to the touch.

  6. Step 6

Cut the jerky into strips with the plastic wrap still attached and roll up. You can determine the size of the portion of jerky. Refrigerate the jerky. Pack it into lunches or take it out and let it get to room temperature for a snack. It will keep in the refrigerator for about 1 month. Store it in a sealable plastic bag.
