Step 1
Start with your favorite chicken: I love dark meat chicken with the skin on but boneless, skinless chicken comes in a fairly close second!
If you have chosen to use chicken with the skin on, prick it well with a fork to help the marinade be absorbed.
Put the chicken in a generous sized bowl. -
Step 2
Pour Italian dressing over the chicken. Stir to coat, and place the bowl in the refrigerator for at least 1 hour.

Step 3
Clean the grill and spray it with non-stick coating. Start the fire and let the grill heat.
I prefer to cook on a gas grill because I find it to be very easy, but cooking over a wood fire will give more of a smoky flavor.
I dislike cooking over charcoal because I am impatient, and cooking over charcoal that is not ready can result in a chemical flavor in the meat. -
Step 4
Place the chicken on the grill, turning it occasionally, until the juices are clear when the chicken is pricked with a fork or a knife.
