How to make Spanish Gazpacho

Gazpacho is a wonderful way to have salad in the summer. Nothing like it on a hot day, and the most healthy way to get your vegetables.

Instructions

Things You'll Need:

  • 8 medium tomatoes
  • 2 small green peppers
  • 2 cloves garlic
  • one piece hard bread
  • one small onion
  • two medium sized cucumbers
  • olive oil
  • vinegar
  • salt
  1. Step 1

    Cut out stem areas of tomotoes and green peppers and wash. Place in large food processor or blender. If blender is small, put in half of ingredients and make two batches.

  2. Step 2

    Put hard bread in water. Ideally two or three day old bread, if only fresh bread, no problem. For example, four inch piece of french bread.

  3. Step 3

    Peel onion, garlic, cucumbers. Put in large food processor with tomatoes and peppers. Again, if using small blender or hand blender, just break ingredients into two or four parts to fit your machine.

  4. Step 4

    Once you have tomatoes, peppers, cucumbers, garlic, onion in food processor or blender, start to mix. Start on chop, and slowly advance to faster speeds. Continue to almost liquid.

  5. Step 5

    Add bread, salt, olive oil, and vinegar. Continue mixing. Taste for salt. Add cold water and ice if you are in a hurry, and put in fridge until nice and cold, enjoy.

Tips & Warnings
  • Big, juicy tomotoes, Beefsteak, for example work well.
  • Be careful with garlic, don't go overboard
