Things You'll Need

  • Whole-wheat berries
  • Buttermilk
  • Blender
  • Eggs
  • Milk
  • Baking soda
  • Vegetable oil
  • Vanilla
  • Salt

Instructions

      Measure 1 cup wheat berries and 1 cup buttermilk into the blender.

      Process the mixture for a minute or two to grind the wheat berries somewhat. It is not necessary to grind them completely yet. This is merely to break them up to begin the soaking process.

      Allow the mixture to soak overnight in the blender.

      Add 2 eggs, 3/4-cup milk, 1 tbsp. baking soda, 1 tbsp. vegetable oil, 1 tsp. vanilla and 1 tsp. salt to the blender and process until the mixture is smooth.

      Make pancakes by pouring 1/4-cup portions onto a hot griddle.

    If you happen to have wheat berries/grain sitting around (for whatever reason...) this is a great way to use them up! Give it a try - it is easier than you think. The pancakes are light, soft and delicious (and so say my kids!), and you could add a Tablespoon of sugar, if you wish. As for soaking overnight, I put it in a cool place, but buttermilk is just thin liquid yogurt, so it's unlikely to spoil overnight on the counter.
