Baked sweet potatoes are an easy alternative to the usual side dishes that your family may be accustomed to eating. With minimal effort, you can serve up something nutritious and delicious that every member of your family will be sure to enjoy.

Instructions

Things You'll Need:

  • 6 medium sweet potatoes
  • 1/4 cup sour cream
  • 2 tablespoons milk
  • 2 tablespoons packed brown sugar
  • 2 tablespoons butter or margarine, softened
  • 1/8 teaspoon salt
  1. Step 1

    Baked sweet potatoes are an easy alternative to the usual side dishes that your family may be accustomed to eating. With minimal effort, you can serve up something nutritious and delicious that every member of your family will be sure to enjoy.

  2. Step 2

    Preheat oven to 375ºF. Use a fork to pierce the sweet potatoes in several places. Place the potatoes on the middle oven rack and back for approximately 45 minutes or until tender.

  3. Step 3

    Remove the sweet potatoes from the oven and increase its temperature to 400ºF. Cut a thin lengthwise slice off of the top of each potato. Using a spoon, scoop out the inside of each potato.

  4. Step 4

    Place the contents of the sweet potatoes in a bowl and mash them until smooth. Add sour cream and milk; beat until completely mixed. Add brown sugar, butter, and salt; beat until potatoes become light and fluffy in texture.

  5. Step 5

    Arrange the sweet potato shells on a 13x9x2-inch baking dish. Fill each shell with a portion of the sweet potato mixture.

  6. Step 6

    Bake, uncovered, approximately 20 minutes or until the sweet potato mixture becomes golden brown.
