How to Make Chive Mashed Potatoes

This is a great side dish to almost any entrée but better associated with meats such as steak, chicken, lamb or veal. This recipe makes for about eight servings and the whole preparation and cooking time should take about a half hour.

Instructions

Things You'll Need:

  • 3 pounds of gold potatoes (peeled and cubed)
  • 1 chicken broth bouillon
  • 3 tablespoons of butter
  • 5 tablespoons of chopped chives
  1. Step 1

    The first thing is to put the potato in a sauce pan filled with water on medium high heat and bring to a boil then lower the heat and simmer on low heat for about fifteen minutes.

  2. Step 2

    Next in another sauce pan put the chicken broth and butter on medium heat for two minutes. And in the meantime mash the potatoes with either a masher or potato ricer, or you can do it the old fashioned way with a fork (which will take longer).

  3. Step 3

    Thirdly stir the fresh chives and the broth mixture into the potatoes, and mix. If you wish you can add more salt (even though the chicken bouillon should be enough) and pepper.
