How to Make Cheesecake Bites

Mini cheesecake bites may look like you've spent hours in the kitchen laboring over them, but they are actually easy to make. If you have access to a food processor and several mini muffin pans four batches can be baked at once.
These directions will result in six dozen cheesecake bites. Does this Spark an idea?

Things You'll Need

  • 3 8-oz. packages cream cheese, softened
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/2 tsp. vanilla
  • 1 12-oz. box vanilla wafers
  • 4 tbsp. butter or margarine, melted
  • Mini muffin pan
  • Mini muffin foil baking cups

  1. How to Make Cheesecake Bites

      Pour the entire box of vanilla wafers into a gallon size food storage bag; seal completely. Use a rolling pin to crush the wafers into fine crumbs. Alternately, you can use a food processor. Add the melted butter to the crumbs. Mix thoroughly.

      Line a mini muffin pan with mini foil baking cups. Make the crust for your mini cheesecakes by placing a teaspoon of crumbs into the bottom of each cup. Press the crumbs down with your thumb so they cover the bottom of the cup.

      Combine the softened cream cheese, sugar, eggs, and vanilla in the bowl of a food processor or mixing bowl. Mix until all ingredients are blended into a smooth batter. If you are not using a food processor, you will need to use an electric mixer to get the best results.

      Fill the baking cups to about three-fourths full, and bake for 25 minutes at 325 degrees.

      Turn off the oven at the end of 25 minutes and open the oven door a crack. Leave it open for about 20 minutes, allowing the cheesecake bites to cool down until the pan can be handled without the need of an oven mitt. They may form cracks on top if they are not cooled in the oven.

      Remove the cups to a serving tray and refrigerate. If you wish, you can peel away the foil cup before serving.

Tips & Warnings

  • -Using more than one mini muffin pan will make your work go faster. Most ovens are large enough to hold four mini muffin tins at one time. -Just before serving, you might want to decorate them by topping each with a slice of strawberry or half a maraschino cherry.

  • Don't be tempted to use paper baking cups instead of the foil ones; the paper cups are intended for cupcakes, and the heavier weight of the cheesecake bite requires a sturdier holder that will not fall apart when it is taken out of the muffin tin.
