How to Make Non-fat Blueberry Muffins
Non-fat blueberry muffins are easy to make. Applesauce takes the place of fat, adding moisture to the muffins. Whole wheat flour and old fashioned oatmeal add texture and healthy grains. A touch of cinnamon and juicy blueberries add mouthwatering flavor. Does this Spark an idea?
Things You'll Need
- 11/4 cups whole wheat flour
- 11/4 cups old fashioned or steel cut oatmeal
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1 cup unsweetened applesauce
- 1/2 cup non-fat buttermilk
- 1/2 cup firmly packed brown sugar
- 2 egg whites, lightly beaten
- 3/4 cup blueberries, fresh or frozen
- 12 cup muffin tin
- Cooking spray
- Large bowl
- Medium bowl

Mix together flour, oatmeal, baking powder, baking soda, salt and cinnamon in a large bowl.

Separate the yolk from the egg whites. Put the egg whites in a medium bowl.

Add applesauce, buttermilk and sugar to the egg whites. Mix together until all ingredients are combined.

Make a well in the dry ingredients and pour the applesauce mixture in the well.

Gently mix the applesauce mixture into the dry ingredients.

Gently fold in the blueberries.

Spray your muffin tin with cooking spray.

Spoon your batter into the muffin cups.

Bake your batter at 375 degrees for 16 to 18 minutes, until the muffin tops look golden brown.

Tips & Warnings
If you can't find non-fat buttermilk, substitute 1/2 cup non-fat, plain yogurt.
Stir your dry and wet ingredients until just moist. Don't over mix them. The batter will be thicker than your usual muffin batter.
