How to Make Pork Enchiladas With Green Sauce

This recipe happened when I planned on making Green Chile Chicken Enchiladas, and discovered I was out of chicken. So I used a pork tenderloin I had in the freezer, and guess what? A new family favorite was born. The cooked tomatillo sauce gives a tangy bold flavor to the pork. If you've never used tomatillos, you've missed a great treat. (See How To Understand Tomatillos) Here's how to make this recipe.

Instructions

Things You'll Need:

  • 1 pork tenderloin (at least one pound)
  • 1 tsp ground cumin
  • Salt and pepper
  • 2 Tbsps olive oil
  • 1 large onion, chopped
  • 2 tsps crushed garlic
  • 3 pounds tomatillos (husks removed, washed and coarsely chopped)
  • 1 cup frozen whole kernel corn, thawed
  • 12 corn tortillas (6")
  • 2 cups coarsely grated white cheddar (8 ounces)

    Preheat oven to 450. Place pork on a baking sheet, rub with cumin and season with salt and pepper. Roast, turning once, until meat thermometer inserted in the thickest part of pork registers 145 degrees, approximately 25 minutes. Let cool for 10 minutes, cut into 4 chunks. Using two forks, shred pork and transfer to a medium bowl and set aside.

    In a large saucepan, heat oil over medium heat, add onion and garlic. Cook, stirring occasionally, until onion begins to soften. Add tomatillos and 3/4 cup water. bring to a boil, reduce heat to low and simmer until tomatillos are soft.

  3. Step 3
    Add 1 cup whole kernel corn

    Put this mixture carefully (remember it's still hot) into a food processor, or blender. Blend until smooth, season with salt and pepper. Add 1 cup of this sauce and 1 cup corn to the pork, mix to combine. Put remaining sauce into a shallow bowl.

  4. Step 4

    Wrap 12 stacked corn tortillas in damp paper towels, microwave on high for 1 minute to soften. Working with and uncovering only one tortilla at a time, dip it in sauce, place on a cutting board and fill with 1/4 cup pork mixture and 1 Tbsp shredded cheese.

  5. Step 5

    Roll up and arrange tortillas seam side down in a 13x9" baking dish. Top with any remaining sauce and cheese, cover with aluminum foil. Bake until sauce is bubbling, about 15 or 20 minutes. Remove foil and continue to bake until cheese is beginning to brown, about 15 minutes.
