How To Make Veggie Chips
Veggie chips are an easy and healthy snack made from sweet potatoes, beets, carrots, zucchini, parsnips or any other firm vegetables. You can vary the flavor with herbs or spices, but veggie chips are colorful and delicious with just a bit of olive oil and a sprinkling of salt. Some people fry veggie chips like potato chips, but this recipe bakes the vegetables in an oven; it's not only healthier and less caloric, but also a lot faster and less messy in the kitchen. Things You'll Need
- 1 lb. firm vegetables, such as beets, potatoes, zucchini, parsnips or carrots (about 3 cups)
- 2 to 3 tbsp. olive oil
- 1 tbsp. salt
- Mandolin slicer, food processor or very sharp knife
- Baking sheet

Preheat the oven to 350 degrees F. Wash and dry the vegetables.

Peel the vegetables if necessary. Slice them as thin as possible---1/4 inch or less---using a mandolin, food processor or by hand with a knife.

Toss the vegetables with the olive oil in a bowl until all the slices are coated. Spread the vegetables in a single layer on the baking sheet. Sprinkle with salt.

Bake the vegetables in the preheated oven for 20 to 30 minutes, or until chips have curled slightly and are crisp. Remove from oven, cool, add more salt to taste, and serve.

Tips & Warnings
You can add a tablespoon or two of dried herbs or spices to the oil before tossing the vegetables. Some possibilities include pepper, chili pepper, dill, oregano or thyme.
