How to Make a Chicken Salad

Things You'll Need
- 4 chicken tenders (uncooked)
- 1 lettuce head
- 8 oz. bag of cherry tomatoes
- 2 hard-boiled eggs
- 6 oz. grated cheese
- 1/2 cup croutons
- Salt and pepper
- For grilled chicken:
- 1 tbsp. of olive oil
- For fried chicken:
- 1 cup flour
- 1/2 vegetable oil

Thoroughly rinse the lettuce and cherry tomatoes and place them on a paper towel to dry. Using a cutting board, slice the lettuce head in half and then begin to coarsely chop the lettuce into chunks. Place the lettuce and the cherry tomatoes in a large salad bowl, cover and place in the refrigerator.

For grilled chicken: (Omit step 4)
Rinse chicken tenders under cold water, pat dry, rub both sides of the chicken with olive oil. Place chicken on a plate. Season chicken on both sides with 1/2 teaspoon of salt and pepper. Place on a grill. Indoor or outdoor grill is fine. Cook for 10 minutes on each side or until the juices run clear. Make sure the chicken is thoroughly cooked by checking the center for pink.
Cut chicken into chunks and place on a plate.

For fried chicken: (Omit step 3)
Rinse chicken tenders. Shake two chicken tenders in a large zip-close bag filled with flour until fully covered. Repeat with remaining chicken tenders.
Heat vegetable oil in a medium size skillet. Place all four chicken tenders in skillet and cook for approximately 3 minutes on each side until golden brown and center is no longer pink.
Place chicken on a paper towel. Let cool for about 5 minutes. Cut chicken into 1/4-inch-wide strips.

Tips & Warnings
Add additional ingredients for a more flavorful chicken salad recipe: Cucumbers, bacon bits and radishes are all tasty choices. To feed six more people, add one additional lettuce head, one additional bag of cherry tomatoes and increase cheese to 12 oz.
Do not overcook the chicken (grilled or fried). Overcooked chicken tends to be dry. Make sure to wash your hands after handling raw meat. Make sure the chicken is cooked thoroughly by checking the center for the color pink.
