Harvest time is great for getting lots of fresh plums for cheap or free. But what to do with all those wonderful plums once you've got them? This easy recipe is great for canning, and stays fresh in tupperware as well.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 lbs/5 cups Damson plums
  • 3/4 cup sugar
  • 1/2 cup water
  • cinnamon stick
  • about a tea spoon of ground cinnamon
  • 1 tablespoon lemon juice
  • canning jars
  • 2 pots, one medium one large
  1. Step 1

I use Damson plums from the tree in my back yard, but any kind of fresh plums will suffice for this recipe. With Damson plums, wash and halve, removing the pits.

  2. Step 2

Combine sugar, water, cinnamon stick, lemon juice and ground cinnamon in pot. Stir and bring to a boil for about 3 minutes.

  3. Step 3

Add plums and bring to a boil. Reduce heat, cover, and simmer about ten minutes or until plums are tender.

  4. Step 4

Using a ladle, pour into glass canning jars. Put covers on jars, then start a large pot of water to boil. Drop jars in boiling water for 5 minutes, making sure water covers the tops of jars (it's okay if they have to lay on their sides in the pot). Pull out carefully and place on counter top or in refrigerator to cool. You will hear the metal lids make a popping sound at some point once they seal themselves.

  5. Step 5

You may also just put the stewed plums into tupperware containers, or use some of them straight away as an excellent topping for vanilla ice cream.

Tips & Warnings
  • Try to use ripe plums with some squish to them; if plums are not very ripe you may need to use more sugar.
  • Be careful when removing hot jars from boiling water; use tongs if you can
