How to Make Macaroni Pasta Salad

Macaroni pasta salad is a delicious cold pasta salad recipe. This is a perfect summer side dish. It is loaded with protein from the tuna and if you use whole wheat macaroni you can get some whole grains in to. This is a very economical party food. Pasta is very inexpensive along with canned tuna and fresh vegetables. My mother made this all the time in the summer when I was a kid and we loved it.

Instructions

Things You'll Need:

  • 1 lb whole grain macaroni
  • 1/2 cup mayo
  • 1/4 cup apple cider vinegar
  • 3/4 cup diced celery
  • 1/2 cup chopped green onion
  • 1/2 cup sweet pickle relish
  • 1/2 cup diced red bell pepper
  • 2 cans tuna in water
  • salt and pepper to taste
  1. Step 1

    Cook the whole grain macaroni pasta in boiling water until it is almost cooked through. You want it a little under done because there will be carry over cooking before the pasta is cooled.

  2. Step 2

    Strain the macaroni pasta and cool it completely. Drizzle the macaroni pasta with a little olive oil to void the macaroni sticking together.

  3. Step 3

    Combine the macaroni pasta, mayo, sweet relish, diced celery, chopped green onion, diced red bell pepper and apple cider vinegar.

  4. Step 4

    Strain the water out of the tuna and break it up with a fork. Add the tuna to the macaroni pasta salad and combine it well. Season the macaroni pasta salad to taste.
