Things You'll Need:
- boneless, skinless chicken breasts, to equal approximately 2-3 cups
- approx 1/2 cup onion, more or less as you prefer
- 2-3 cloves of garlic, minced
- 1-2 T. olive oil (or canola)
- approximately 10 basil leaves, chopped
- 3 medium sized garden tomatoes, chopped
- 1 tsp salt, more or less as you prefer
- 1/4 tsp red pepper flakes, more or less as you prefer
- angel hair pasta; we prefer whole wheat
- grated parmesan or shredded mozzarella cheese

Step 1
Slice two chicken breasts into thin slices. Brown in a large skillet sprayed with cooking spray. Cook until they have spots of golden brown and they have reached an internal temperature of 170 degrees. Set aside on a plate.

Here’s a quick tutorial on chopping an onion by hand. Begin by making long slits not quite all the way through the onion.

Rotate the onion 90 degrees and cut slits perpendicular to the slits you just made, again taking care not to slice all the way through the onion.

Turn the onion on its side and slice as usual. The onion is chopped! I like to make bigger chunks so that people can pick them out if they don’t want them, but for this I chopped it more finely.

Pour approximately 1 T. of olive oil (or canola) in the skillet you used to cook your chicken. You want to keep all the brown pieces from the chicken that stuck to the pan. Start water boiling for your pasta. Add onion and garlic to skillet. Cook for a few minutes until onion is soft. You’ll want to begin chopping your tomatoes right away or even before you start the onion and garlic, as it cooks quickly.

Chop your tomatoes in chunks the same way you chopped your onion. Be sure to add any juice has come out of the tomato. Be sure to keep any juice that comes out as you chop. Add in to the pan in the next step along with everything else.

Add tomatoes, cooked chicken, basil, salt, and red pepper flakes to the pan. Simmer about 5 minutes, until tomatoes are soft and everything is hot. Drop your pasta into your boiling water while the chicken mixture simmers.

Add grated parmesan or mozzarella cheese, and fresh ground pepper to the dish once on the plate. I served with some broccoli that I threw in a glass dish with some water, and cooked in the microwave about 4 minutes to steam. I seasoned the broccoli with some butter spray, salt, and Mrs. Dash. My daughter gobbled that up in a hurry!
