How to Make Gluten-free Banana-Nut Muffins

We're always on the lookout for good tasting gluten free baked goods, and these muffins hit the spot. They are low in fat and sugar as well, and the walnuts give some additional protein and good health benefits.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 1/2 cups Bob's Red Mill gluten free flour
  • 3 T flax meal
  • 1/2 cup Splenda brown sugar
  • 3/4 t Xanthan gum
  • 1 t baking powder
  • 1/2 t baking soda
  • 1/4 t sea salt
  • 1 cup mashed ripe bananas
  • 1 egg
  • 1/4 c cow, soy or rice milk
  • 3 T canola oil
  • 1 t vanilla extract
  • 1/3 cup chopped walnuts
  • muffin tin
  • bowls, measuring cups
  1. Step 1

    Heat the oven to 350 degrees. Coat a 12 cup muffin tin with cooking spray, or line with paper cups. This recipe makes 8-10 muffins, depending on how full you fill the cups.

  2. Step 2

    Mix together the flour, flax meal, baking powder, baking soda, sugar, Xanthan gum, and salt in a large bowl.

  3. Step 3

    In a another bowl mix together the mashed banana, oil, milk, and vanilla until combined.

  4. Step 4

    Create a small well in the dry ingredients and pour in the banana mixture, stirring until mixed. Don't over mix. Less is more with muffins. Fold in the chopped nuts.

  5. Step 5

    Fill the muffin cups 3/4 full. Bake until golden brown on top, or a toothpick inserted in center comes out clean. This is usually 15-20 minutes, but adjust according to your oven.

Tips & Warnings
  • Reserve a couple tablespoons of the chopped nuts to sprinkle over the tops before baking.
