How to Make Latkes / Potato Pancakes Without Peeling Potatoes

Keep this a secret during your Hanukkah celebrations and everyone will think you slaved in the kitchen all ay peeling potatoes for the most wonderful latkes you've ever had. Lakes, or potato pancakes, are a tradition during Hanukkah celebrations

Instructions

Things You'll Need:

  • 1 bag Frozen hash brown potatoes
  • 1-1/2 large onions, chopped
  • 2 Tablespoons cracker crumbs (or matzo)
  • 6+ eggs Eggs
  • oil for frying
  1. Step 1

    The secret of these latkes is starting off with frozen hash browns. No mess, no fuss, and lots less work - plus the potatoes do not darken.

    Thaw the hash browns in the refrigerator until they are mostly thawed. If you do not do this, the eggs will freeze when you add them (yes, I learned the hard way! :D)

  2. Step 2

    To the nearly thawed hash browns, add the cracker crumbs and the chopped onion. Don't skip on the onion. In this case more is definitely better. Add the eggs - enough to hold the potato mixture together.

  3. Step 3

    Form into balls and place in frying pan with hot oil. Flatten with a spatula. When the latke is brown and crisp, turn with spatula and fry the other side until done. You will definitely need to adjust temperature as you are cooking. Continue cooking the pancakes until done. You can keep them warm in a 200F oven f you must - although they are best served hot right out of the pan.

    Traditionally served with sour cream or apple sauce. I love them with apple sauce

Tips & Warnings
  • Better served the same day they are cooked
  • Do not skimp on the onion
