Things You'll Need:
- 6 large tomatoes
- 2 large peaches
- Juice of 1/2 lime
- 1 small onion
- 3-4 jalapeno peppers
- 1 clove of garlic
- 1/2 cup of cilantro

This is a great recipe for mid-Summer garden overflowThe first step in preparing the salsa is to skin, deseed and chop the tomatoes into small pieces. Do the same with the peaches, and set aside in a bowl. Try to get peaches with some firmness to them, rather than being too soft.

Salsa ingredients go into the food chopperNext, wash and chop the cilantro into small pieces. Then peel and chop the onion and the garlic clove. You can use a food processor to chop these items, but don't chop them too fine, just a few quick pulses should be enough. All these ingredients go into the bowl.

Next, roll your lime across the countertop and put some pressure on it with your hand. This helps you get more juice out of it. Cut the lime in half and squeeze out the juice from half the lime into the bowl with the rest of the ingredients. Discard the lime. (Or make a mojito with the other half!)

Stir all the ingredients together well. Give it a taste test and see if the salsa is hot enough for your taste. If not, toss in another jalapeno.
Let the salsa sit in the refrigerator for at least an hour to allow the flavors to mingle.
This recipe makes about 3 cups of salsa, or a small bowl.
