If you are on a tight budget, then prepare a large pot of vegetable soup. Potatoes are cheap and filling. They can also be stretched by cutting them in very small pieces.

Bake rolls or a loaf of bread for your potluck dinner item . Today's bread machines make easy work of baking bread. If you will be making rolls, use the bread machine to knead the dough and then let it rise in a bowl. The rolls will be lighter and fluffier rather than rising in a small bread machine pan.
