Now that summer is winding down and all your homegrown herbs are growing, how do you take advantage of their freshness in the future. This quick and easy method will guarantee fresh herbs for your cooking in the months to come.

Difficulty: Easy
Instructions

Things You'll Need:

  • Plastic ice cube trays
  • Garden herbs
  1. Step 1

When fully rooted, cut off stems of your mint, rosemary, basil and/or chives plants.

  2. Step 2

Rinse gently with warm water, lay out on paper towels to dry. Once dry, cut into small pieces. Place cut out herbs into the plastic ice cube trays. You can use one tray for various types of herbs or use a different one for each of the herbs. Fill up each section of the dry with enough herbs to fill the bottom and slightly up the sides.

  3. Step 3

Gently fill each section with warm water. Place into freezer, marking each tray with which herb it contains if desired. Once frozen, your herbs are as fresh as the day they were picked. Just drop a cube in your spaghetti sauce for the fresh taste of basi. Or are you craving a mojito in the fall? Just drop a couple of cubes into your cocktail. Making rosemary chicken? Let the cubes melt and use the fresh rosemary for your chicken.

Tips & Warnings
  • If ice cube trays are new, rinse with soap and water.
