How to Make a Healthier and More Delicious Zucchini Bread

My friend Jeanne gave me this absolutely beautiful 16 1/2 inch zucchini from her garden and I immediately thought about zucchini bread. Since my grand daughter was visiting I enlisted her aid and it came out delicious. It is crispy on the outside and nice and moist on the inside.

The ingredients in this zucchini bread will help to lower your cholesterol and blood pressure. Be sure to wash it well and leave the skin on it because most of the nutrients are found directly under the skin.

Zucchini is a source of calcium, magnesium, phosphorous, vitamin C, niacin, Riboflavin, Pantothenic acid, vitamin B-6, choline, Folate and a very good source of beta carotene, Vitamin A, Lutein, and Potassium. Apple sauce is another good source of potassium. The sunflower seeds I replaced the nuts with are an excellent source of vitamin E, and a very good source of vitamin B1 along with a good source of several other nutrients. The two nuts richest in phytosterol content are pistachios and sunflower seeds, making both these nuts excellent choices in our fight to lower our cholesterol. Instructions

Things You'll Need:

  • 3 1/4 cup flour
  • 1/2 tsp. salt
  • 1 1/2 cup sugar
  • 1 tsp. cinnamon
  • 1 tsp. pumpkin pie spice
  • 1/2 cup orange peel
  • 1 tbsp. baking powder
  • 3/4 tsp. baking soda
  • 2 cups shredded unpeeled zucchini
  • 6 1/2 oz. pkg. sunflower seeds
  • 4 eggs
  • 1/2 cup applesauce
  • 1/2 cup canola oil
  • 4 eggs
  • 1/3 cup water
  1. Step 1

    Preheat your oven at 350 F. Spray two loaf pans with your choice of vegetable oil spray.

  2. Step 2

    Blend all your dry ingredients in a large mixing bowl. Chop and grate zucchini until you have 2 cups. Fold your zucchini into your mixture. Add sunflower seeds.

  3. Step 3

    In separate bowl, see picture, blend ½ cup applesauce and ½ cup of oil, and add 4 eggs stirring well. Fold into mixing bowl with batter.

  4. Step 4

    Fill smaller bowl with 1/3 cup of water. Use this water to scrape the sides of the bowl and get the rest of the ingredients blended into the water to pour into your batter.

  5. Step 5

    Divide batter equally and pour into your loaf pans. Bake at 350 for 1 hour and 10 minutes or until knife inserted in the center comes out clean.

Tips & Warnings
  • Grate and freeze 2 cups of zucchini in bags, so you will be ready to make fresh bread in the future.
  • Make extra loaves to give away as gifts.
  • Always handle hot items with care.
