Things You'll Need:
- 1 egg
- 1 cup milk or buttermilk
- 2 Tbs salad oil
- 1 cup all-purpose flour
- 1 Tbs sugar
- 1 tsp banking powder
- 1/2 tsp baking soda
- 1/2 tsp salt

Step 1
Separate egg yolk from egg white.

Add remaining ingredients to the egg yolk in order listed and beat with a whisk until mixture is thoroughly mixed.

Beat egg white with a rotary beater until the white is stiff.

Fold the stiff egg white gently into the pancake mixture.

Spread or spray cooking oil on the griddle, then turn the griddle on. The griddle is hot enough with water is lightly sprinkled on the hot griddle and the water droplets skitter around the griddle.

Gently ladle or pour the pancake batter mixture on the griddle until the pancake reaches the preferred size.

Step 7
Turn pancakes over as soon as they are puffed and full of bubbles and before the bubbles break. Cook until golden brown.

Makes approximately 10 4" pancakes.
