Things You'll Need:
- 1 box graham crackers
- 2 pkg. instant French vanilla pudding
- 3 tbsp. milk
- 2 3/4 c. milk
- 9 oz. Cool Whip
- 3 tbsp. soft butter
- 2 tbsp. white corn syrup
- 2 oz. semi-sweet or unsweetened chocolate squares
- 2 tsp. vanilla
- 1 1/2 c. powdered sugar
- 13x9 inch pan

Step 1
To begin making this cake lightly grease a 13x9 inch pan (aluminum pans work too).

Next line this pan with your graham crackers. Some will need to be broken into smaller pieces to fit in the corners and around the sides.

Mix 2 packages of instant French vanilla pudding with 2 3/4 cups of milk and beat this well with a mixer. Then add 9 oz of Cool Whip and beat together.

Pour 1/2 of this mixture over the graham crackers that you previously lined the pan with. Then add another layer of graham crackers and pour the remainder of the pudding over the crackers. Top with a third layer of graham crackers.

To make the topping of the cake melt 2 oz semi-sweet or unsweetened chocolate squares, 2 tbsp. white corn syrup, 3 tbsp. milk, and 3 tbsp soft butter in a pan. Then add 2 tsp vanilla and 1 1/2 c. powdered sugar.

Spread this topping over the top layer of graham crackers. Refrigerate overnight and enjoy your Chocolate Eclair Cake!
