I have a fabulous recipe for tuna croquettes that you will absolutely love. Most people cannot tell the difference between crab croquettes or cakes and the tuna croquette. Tuna croquettes are an economical substitute to crab and they taste great.

You will need 2 cans solid white tuna, 1 cup of fresh parsley, ½ cup grated Locatelli, 2 eggs, 1 cup light cream, 1 cup diced celery, 1 cup diced onion, 1 cup Italian bread crumbs, 1 teaspoon salt, crumbs, and 2 cups mashed potato flakes for the outer breading.

In large mixing bowl combine tuna, celery, onion, breadcrumbs, cheese, eggs, and parsley, mix together well. Next, you want to roll the mixture as if you were making a meatball, after rolled then cover with mashed potato flakes and set aside. You should get about 10-12 croquettes out of the mixture.

Finally, in large skilled pour 2 cups olive oil, when oil begins to bubble you can start to add the croquettes. Cook about 8-10 minutes each side. Drain on napkin or paper towel and serve. You can make a delicious hollandaise sauce to go with the croquettes. Enjoy!
