How to Make Tasty Salmon Croquettes
Salmon croquettes are tasty patties of salmon, seasonings, onion and bread crumbs that are fried in oil. These also are called salmon patties and salmon cakes, and are similar in consistency to crab cakes. They can be served as an entree themselves, accompanied by side dishes, or even used in a sandwich. This recipe for salmon croquettes serves five. Does this Spark an idea?

- 1 lb. Alaskan salmon
- 1 cup chopped celery
- ½ cup diced Spanish onion
- 1 tbsp. garlic powder
- 1 tsp. salt
- 1 tsp. pepper
- 2 eggs
- ½ cup Italian bread crumbs
- ½ cup light cream
- ½ stick melted butter, divided
- ¼ cup grated Locatelli cheese
- White wine
- 1 cup fresh parsley
- Baking sheet
- Large mixing bowl
- Potato masher (optional)
- Pastry brush
- Canola oil
- Large skillet
- Deep fry thermometer
- Plate
- Paper towels

Preheat oven to 350 degrees.

Place the salmon on a baking sheet. Pour melted butter and about ¼ cup of white wine over the fish. Bake for about 14 minutes. Remove salmon and set aside to cool.

In a large mixing bowl, add celery, onion, garlic powder, salt, pepper, eggs, bread crumbs, butter, cheese and parsley. Break salmon into small pieces, discarding skin, and it add to the mixture. Mix well by hand or use a potato masher to combine all ingredients.

Roll mixture as if you were making medium-sized meatballs. Form at least 10 salmon balls from the mixture. Brush the balls with melted butter and roll each salmon ball on a plate containing Italian bread crumbs. Completely cover the salmon balls.

Place the salmon balls on a baking sheet lined with parchment paper. Flatten the balls slightly so they form patty shapes. Refrigerate the croquettes for at least an hour. This helps them hold together better when cooking.

Add ½ cup of canola oil to a large skillet. Heat until the oil registers 325 degrees on a deep-fry thermometer. Add the croquettes to the hot oil. Cook each side of croquette for about five minutes each or until brown. Drain the croquettes on a towel-lined plate. Serve with a variety of sauces or eat the salmon croquettes plain.
