Things You'll Need:
- frozen french fries
- vegetable oil
- soft mozzarella
- gravy
- pot (or fryer)

Step 1
Place your vegetable oil into your pot or fryer and heat up the oil to a good frying temperature. If you are using a pot, try heating the oil up for 10 minutes at an *almost* high setting.

Test your oil by dropping in a small french fry. If the fry begins to sizzle and bubble, your oil is ready.

Make your gravy. You can use any type of gravy you wish for this, but I have had the greatest successes with turkey and pork gravy. Jar gravy is the perfect consistency for poutine, but homemade gravy will work just as well.

Pour your gravy into a pot over medium heat. Stir periodically.

Fry your French fries until they are a golden brown.

Open your cheese and pull it apart in chunks and strips. You MUST buy the soft mozzarella that comes in a square block and is squishy when you squeeze it. White cheddar cheese curd is the usual poutine cheese but is expensive and difficult to find. There is almost NO taste difference when substituting soft mozzarella.

Step 7
Place your fries in a bowl. Tuck your chunks and strips of soft cheese all around the fries. Cover the fry/cheese mixture with the hot gravy from the stovetop.

Heat in the microwave for 30 seconds. Even though the fries and gravy are already hot, they aren't going to be hot enough to quicky melt the cheese to the proper consistency for poutine. You must give it a quick microwaving.

on 8/28/2009 My husband is from Montreal and misses poutine (he always has the one with chicken added). I can't tell you how I have searched for cheddar cheese curds. I think I will try this mozzarella trick and surprise him. Thanks!
