Turkey Stir Fry with Mushrooms and Spinach is such an easy dish to make providing you have cold turkey in the refrigerator. I like to buy a rotisserie turkey breast at the grocery store and then have several easy meals from it throughout the week. The flavor of the roasted meat adds to the taste of this stir fry meal. I hope you try and enjoy my Turkey Stir Fry with Mushrooms and Spinach.

Instructions

Things You'll Need:

  • Turkey slices
  • Mushrooms
  • Marsala Wine
  • Butter or Butter Substitute
  • Turkey Broth
  • Water
  • Quinoa
  1. Step 1

    First cook the quinoa. Into a medium sized sauce pan add: 1 cup of dry quinoa and 2 cups of water. Place a lid on the sauce pan. Bring the mixture in the pan to a boil. Then turn the stove down to medium-low and simmer for 10 minutes or until all the water has been absorbed by the quinoa. This step is similar to cooking rice or coucous.

  2. Step 2

    Into a large frying pan add the following ingredients: 2/3 pound pre-cooked turkey slices, 1 cup of fresh mushrooms, and 1 tablespoon of butter or butter substitute. Saute until the mushrooms are cooked. Add 1/2 cup of marsala wine and 1/2 cup of turkey broth. Simmer for five minutes. Just before serving stir in 2 cups of washed and dried, raw baby spinach.

  3. Step 3

    Place cooked quinoa on a large serving plate. Add turkey stir fry mixture on top.

  4. Step 4

    Eat and Enjoy.
