Things You'll Need:
- Turkey slices
- Mushrooms
- Marsala Wine
- Butter or Butter Substitute
- Turkey Broth
- Water
- Quinoa

Step 1
First cook the quinoa. Into a medium sized sauce pan add: 1 cup of dry quinoa and 2 cups of water. Place a lid on the sauce pan. Bring the mixture in the pan to a boil. Then turn the stove down to medium-low and simmer for 10 minutes or until all the water has been absorbed by the quinoa. This step is similar to cooking rice or coucous.

Step 2
Into a large frying pan add the following ingredients: 2/3 pound pre-cooked turkey slices, 1 cup of fresh mushrooms, and 1 tablespoon of butter or butter substitute. Saute until the mushrooms are cooked. Add 1/2 cup of marsala wine and 1/2 cup of turkey broth. Simmer for five minutes. Just before serving stir in 2 cups of washed and dried, raw baby spinach.

Step 3
Place cooked quinoa on a large serving plate. Add turkey stir fry mixture on top.
