The difference between a Reuben and a Rachel sandwich.
For a Reuben use corned beef and for a Rachel sandwich use pastrami.

Difficulty: Easy
Instructions

Things You'll Need:

  • Rye bread
  • 1000 island dressing
  • Sauerkraut
  • Swiss cheese
  • Corned beef or pastrami
  • Non stick skillet
  1. Step 1

First make the 1000 Island dressing by mixing together, 3 parts mayonnaise 1 part ketchup and sweet pickle relish to taste.
Spread two slice of Rye bread with the dressing and top with 1-2oz of sauerkraut.

  2. Step 2

To one piece of the Rye bread, add 3oz of thinly sliced corned beef or pastrami, ask the deli to shave the meat for you, and top with 2 slices of quality Swiss cheese. Gruyere is the best.
Top with the other piece of Rye.

  3. Step 3

Now here's my restaurant secret....Wrap the sandwich in foil until ready to eat, this way you can make up your sandwiches ahead of time.
Put the wrapped sandwich on a tray and bake in a 350 degree oven for approximately 20 minutes, until the meat and sauerkraut is hot and the cheese is melted.

  4. Step 4

Unwrap the sandwich and in a non stick pan or griddle if you have one, with a little butter in the pan cook each side until browned.
Serve with mustard a Kosher pickle and an iced cold beer.

Tips & Warnings
  • Use fresh sauerkraut and good quality meats and cheese for the best results.
