      First it is a good idea to gather together all the ingredients that are needed to prepare the fried chicken. These include
      Fryer Chicken
      1 teaspoon of salt
      1 teaspoon of pepper
      1 teaspoon cayenne pepper
      1 teaspoon poultry seasoning
      1/2 cup of flour
      Vegetable Oil or Crisco
      Frying Pan
      Turning Fork
      Serving Platter

      At the grocery store there are various cuts of chicken for roasting, baking, frying. Make sure to purchase a chicken that is specifically for frying. And purchase the precut variety.

      Remove the chicken from it's package. Place under running water in the sink. Wash and dry. And set aside on a platter or paper towels.

      Now, coat each piece of chicken. Place the flour, and seasonings in a large baggy. Shake to mix up. Drop the pieces of chicken into the bag and shake until the pieces of chicken are coated completely.

      Melt the vegetable oil or Crisco in a skillet. Saved bacon fat is the best. Use if it is available. Make sure the oil is about 1/2 inch thick
      in the frying pan. The oil should be hot but not so smoking hot to fill
      the kitchen up with smoke.

      Place pieces of chicken in the oil and let them brown. Cover and continue cooking the chicken pieces until they are very juicy and tender.

      Once the chicken is through cooking place the pieces on an absorbent paper towel before serving. This is to remove any excess oil.
