How to Make Scalloped Corn that your Family will love

Scalloped corn makes a nice side dish for chicken, beef or pork.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Fresh corn (frozen)
  • onion (Vidalia)
  • vanilla soy milk
  • bread crumbs (Homemade)
  • Shredded cheddar cheese (Low fat)
  • Red bell pepper
  • 2 Brown eggs
  • mozzarella cheese
  • 1 can of creamed corn (any brand that you like)
  1. Step 1

    Pre-heat oven to 350 degrees. Butter a medium sized casserole dish and set aside. If you are using corn from the garden use at least 5 ears of corn. Make sure to clean each ear of corn before you remove kernels. In a small sauce pan heat diced red bell pepper and 1 chopped Vidalia onion in small amount of butter. I use Vidalia onions in my recipes because they have a sweet taste. Cook until tender and drain in a colander.

  2. Step 2

    In a large mixing bowl add 1 can of creamed corn along with your corn from the garden. Frozen corn will also work good with this recipe. I always use soy milk in my recipes because I find it adds to the taste. Add 1 cup of soy milk, 1 cup of bread crumbs and 2 brown eggs. Add 3/4 cup of shredded cheddar cheese and 1/4 cup of mozzarella cheese. I like to use two types of cheese. I have found that it adds to the texture and taste in a very good way. The last ingredients to add are your drained red pepper and onion.

  3. Step 3

    Place all ingredients in the casserole dish and bake uncovered for 50 minutes. Remove from oven and if you like you can sprinkle your casserole dish with the cheese of your choice. Sometimes I put extra sharp cheddar cheese on the top. It is delicious. Enjoy!

Tips & Warnings
  • For a really special treat you can make corn bread to go with your meal. It goes good with this side dish. As you can tell my family loves corn.
  • Be very careful when you remove your casserole from the oven because it will be hot! Use mitts!
