How to Make a Coconut Pie That Makes Its Own Crust

This is another favorite of the deserts that I make for family holiday dinners.
It is a coconut custard pie that makes it's own crust and it all goes into a blender then to the oven.
Some people like it warm and some like it served cold.
I like it because I don't have to make or buy a pie shell for this coconut custard pie.
There is usually a little of the mix left over so I just put it in a smaller pie pan for the kids and they think that its their own little pie or you could use smaller pie pans and make 2 out of it.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 cups milk
  • 3/4 cups sugar
  • 1/2 cup biscuit mix
  • 4 eggs
  • 1/4 cup butter or margarine
  • 1 1/2 teaspoons vanilla
  • 1 cup flake coconut
  1. Step 1

    Put milk, sugar, biscuit mix, eggs, butter and vanilla into blender.

  2. Step 2

    Cover and blend for 3 minutes at low speed

  3. Step 3

    Pour into 9 inch greased pie pan and let sit for 5 minutes.

  4. Step 4

    Sprinkle coconut on top

  5. Step 5

    Bake at 350 degrees for 40 minutes

Tips & Warnings
  • It can be served warm or cold
  • Pour the ingredients in the pie pan close to the oven so that it doesn't spill everywhere
