How to Make Michoacan Beef Stew

Beef stew is a common food item found on the tables of many restaurants and homes throughout the world. This beef stew originated from the Michoacan region of Mexico, an area with a population of around 4 million people bordered by Jalisco, Colima and the Pacific Ocean. Michoacan beef stew spices up a traditional beef stew by using common Mexican ingredients including a fairly spicy smoked jalapeno pepper, also known as a chipotle chili. Things You'll Need

  • 2 yellow onions, chopped
  • 6 cloves garlic, chopped
  • 1 lb. tomatoes,diced
  • 1 chipotle chili, de-seeded and chopped
  • 12 oz. green beans
  • 2 1/2 lb. stewing beef
  • 3 tbsp. vegetable oil
  • 2 tbsp. all-purpose flour
  • 6 cups beef stock
  • Kosher salt and pepper (to taste)

      Mix the flour and salt and pepper in a large mixing bowl. Add the beef and toss to coat. Remove and set aside on a clean plate.

      Heat the vegetable oil in a large skillet. Add the meat to brown.

      Reduce the heat and add the onions and garlic. Cook until the onions are translucent and the garlic has softened.

      Add the tomatoes, chili and beef stock. Simmer for 1 1/4 hours or until the meat is soft and tender.

      Cut the ends off the green beans and add them to the skillet. Cook for an additional 15 to 20 minutes. Ladle into individual bowls and serve hot.
