How to make a GIANT batch of Marinara Sauce

Are you cooking for an army? Or a church event? Or catering a large party? Well, here's a recipe for a LARGE amount of Marinara Sauce that will feed 150 people. It is simple but delicious.

Instructions

Things You'll Need:

  • 2 - #10 Cans of Tomato Puree
  • 6 - #10 Cans of Whole Peeled Tomatoes
  • 3 Cups Chopped Garlic
  • 2 Small Onions Diced
  • 3 Cups Burgundy Wine
  • 1/2 Cup Fresh Basil Chopped
  • Olive Oil
  • 1 Tbsp Crushed Red Pepper
  • 1 Tbsp White Pepper
  • 1 Cup Sugar
  1. Step 1

    On medium high heat add some olive oil to the bottom of a large pot and add the chopped two onions. Allow the onions to cook till no more moisture is in the pot.

  2. Step 2

    Add the garlic to the pot and cook for a few minutes. Stir every now and then to avoid burning the garlic.

  3. Step 3

    Add in the red wine of your choice and cook till liquid is educed by half.

  4. Step 4

    Add the tomato puree, whole peeled tomatoes, basil, crushed red pepper, white pepper and sugar. This should be allowed to cook for at least 3 hours. Using a potato masher, mash the whole peeled tomatoes till all have been crushed. Stir every now and then to avoid burning.

Tips & Warnings
  • Dried basil can replace the fresh.
  • A #10 can is a very large can that is used in foodservice. These can probably be found in Sam's Club, etc.
