How to Make Persian Tomato & Cucumber Salad ( Shirazi Salad)

This is the most common salad served with Persian cuisine. In the summer tomatoes and cucumbers are plentiful and used in many ways, this is a favorite. Often small cucumbers are served on fruit platters and eaten like a piece of fruit with salt.

Instructions

Things You'll Need:

  • 3 cucumbers
  • 3 tomatoes
  • 1 lg. red onion
  • 1/4 cup olive oil
  • 3 limes or lemons
  • 1 tsp. dill weed & mint
  • salt & pepper to taste
  1. Step 1

    Peel cucumbers and dice finely set aside while chopping tomatoes into similar size as cucumbers. Cut the red onion as small as you can and add to tomato & cucumber mixture in a bowl and chill.

  2. Step 2
     

    Juice the limes or lemons in a bowl and add the olive oil. Sprinkle the dill weed, salt and pepper into the dressing and whisk just a bit, refrigerate.

  3. Step 3
     

    When you are just about to serve dinner remove vegetables and dressing from refrigerator. Combine the dressing with cucumbers & tomatoes & onions give it a nice toss. Taste for correct amount of seasoning, if satisfied with flavor serve in an attractive salad bowl.

Tips & Warnings
  • This is a nice salad to serve for formal dinners, picnics, weddings and casual meals. Very easy to make a day ahead but do not add dressing until serving time. Also this goes well with Mast-O-Khiar: cucumber and yogurt an appetizer.This recipe can be doubled for larger groups.
  • Add dressing right before serving otherwise salad will become watery.
