Things You'll Need:
- 1 ¼ cup old-fashioned rolled oats
- ¾ cup all-purpose flour
- ½ teaspoon baking powder
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ teaspoon salt
- 6 tablespoons butter (softened)
- ¾ cup brown sugar (firmly packed)
- 1/2 cup egg substitute
- 1 teaspoon vanilla extract
- ¾ cup raisins or dried cranberries
- Non-stick cooking spray

Step 1
Preheat your oven to 350 degrees. Add the first six ingredients to a bowl and stir with a whisk until the ingredients are well combined.

In a large bowl, beat the softened butter and brown sugar with an electric mixer until light and fluffy. Add in the egg substitute and vanilla. Beat until combined.

Slowly add the dry ingredients to the wet ingredients and mix with a large spoon or spatula until combined (do not over stir).

Lightly spray your cookie sheets with non-stick cooking spray. Using a tablespoon, drop cookies onto the cookie sheets and space them at least an inch apart. Gently press each cookie with the back of your spoon to flatten slightly. The recipe should yield about 16 oatmeal cookies.

Cook oatmeal cookies until the edges are golden brown, about 12-14 minutes. Allow cookies to cool for a few minutes on the cookie sheet or a cooling rack before serving. These healthy oatmeal cookies have approximately 105 calories each.
