Things You'll Need:
- Crock pot
- Chicken breast
- One onion
- Three cloves of garlic
- Cumin seeds
- Ground cumin
- Ground coriander
- Ground pepper (white or black)
- 15 ounce whole kernel corn
- 15 ounce Great Northern beans
- Three four ounce cans of chopped green chilies
- Lime juice
- Sour cream
- Fresh cilantro
- Tortilla strips
- Shredded cheese

Step 1
Select a large enough crock pot. Make sure it is at least three quarts.

Place 1 ½ pounds boneless skinless chicken breast along with 3 ½ cups of water in the crock pot. You can substitute chicken broth for the water if you desire.

Add approximately one cup of chopped onions. This is about one medium sized onion.

Chop three cloves of garlic and put them in the pot. If you do not have the cloves of garlic use about three teaspoons of garlic powder but I prefer fresh ingredients personally.

Add a teaspoon of cumin seeds, two teaspoons of ground cumin, ½ teaspoon of ground coriander and ½ teaspoon of ground pepper (white or black).

Turn crock pot to high and let cook for about six hours or until chicken is done.

Remove the chicken from the crock pot and shred.

Return the chicken to the crock pot.

Add one fifteen ounce can of whole kernel corn and one fifteen ounce can of Great Northern beans.

Add three four ounce cans of chopped green chilies and three tablespoons of lime juice.

Stir thoroughly.

Let cook for at least an hour.

Just before you are ready to serve add about a cup of sour cream and two tablespoons of chopped fresh cilantro.

Stir thoroughly.

Serve it in bowls.

You can garnish the chili with tortilla strips and shredded cheese if you wish. I like it with the shredded cheddar cheese.

Enjoy! You can serve with a side of tortilla chips or a cheese quesadilla.
